Browar Stu Mostow: a brewery proudly reviving the traditions of Wroclaw, Poland

Wroclaw is a city that was given back to Poland after WWII. Poland itself just celebrated its 100th anniversary of independence. It’s no wonder that they’re actively reviving their cherished cultural traditions! Browar Stu Mostow is at the forefront of the effort and I was glad to be hosted to experience it!

The brewery was opened by a young couple who had tired of the corporate global rat race and sought a creative way to contribute to the area.

Wroclaw had an 800 year tradition of brewing beer. In the 1200s, they produced barley beer and shifted to wheat in the 1500s. Schops is the classic style of the area and historians believe that it was low in hops with malt, balanced by a touch of acidity from aging in oak barrels. The brewery has brought it back!

  • Style: Schops
  • Parameters
    • Extract: 14,5 %
    • Alcohol: 4,3 %
    • IBU: 15
  • Ingredients:
    • Wheat malt; barley malts: Pilsner, caramel hell; caramel red; melanoid, chocolate wheat malt
    • Hops:
      • Bitter: Lomik (PL)
    • Yeast: Empire Ale M15 Mangrove Jack’s
    • Bacteria:  Lactobacillus lactis, Lactococcus lactis, Lactobacillus plantarum, Lactobacillus delbrueckii ssp. bulgaricus
  • Look: cloudy, dark
  • Aromas:  nutmeg, honey, slightly roasted yeast dough; dry apricot
  • Mouthfeel:
    • full, malty
    • honey-nutmeg
    • slightly acid, sweet and sour finish
  • Serving temperature: 5-8C
  • Glass: Weizen
  • Foodpairing:- Wroclaw stew; venison served with Wroclaw gnocchi; cumin-flavoured sausage; cheeses: Sudecki-type cheese, Domnicki-type goat cheese; desserts: yeast dough with cinnamon crumble

Just like Bach crafted a theme and then mastered variations, the brewery creates a changing roster of flavors. They use locally beloved ingredients like smoked plums ”so good with poultry!” and strawberries. Their beers aren’t sweet or artificial, though. The fruit is super subtle and the beers remain sophisticated. Their Strawberry Milkshake beer is very popular and rightly so! It’s refreshing and easy on the palate.

The brewery does frequent collaborations with other craft brewers throughout Europe! They have as much fun doing it as we have drinking them. Think Spain, Russia, Germany.

The place is super popular! Along with beer, they’ve created a high quality gastropub, with innovative takes on traditional Polish comfort food. There are small plates and entrees available, all modestly priced. The menu lists recommended beer pairings.

I was able to try cheese croquettes, poultry livers and goose meat roasted in ale. Presented simply, home-style, they don’t shy away from rich, powerful flavors.

This is a great place to experience the taste and history of Wroclaw all at once!
